Enjoy a delicious summertime dish!


Celebrate summer by preparing LA Plaza’s tasty and delicious Sweet Corn and Black Bean Salad. Beans, corn, and squash are known as the Three Sisters, a Native American method of growing these three crops together and incorporating them into their diet. When used together, these three ingredients make for a healthy dish!


The recipe below is simple and easy to make and is versatile enough to add some of your favorite tasty ingredients. Remember practice kitchen safety at all times.

Sweet Corn and Black Bean Salad

Don’t forget to add avocado, chiles, and your favorite fruits or vegetables!



1- 30oz. can of black beans, drained and rinsed

1- 15oz. can of sweet yellow corn, drained

5 small cherry tomatoes, chopped

1 large-sized red bell pepper, diced

2 green onions (white and green parts), chopped

1/3 cup fresh cilantro leaves, chopped

1 tablespoon corn oil

2 limes, squeezed

1/4 teaspoon chili powder

Salt and pepper to taste



1. In a large bowl, combine beans, corn, tomatoes, red bell pepper, green onions, and cilantro.

2. Add corn oil, lime juice, chili powder and salt & pepper.

3. Mix well.

4. Refrigerate salad for at least one hour to chill and allow flavors to combine.
