Students will learn tips, techniques, and will be walked through step-by-step in this hands-on mole class. Mole is a beautifully intricate sauce, savory and sometimes sweet. Mole, Molli or Mulli, the word for sauce in Nahuatl, is not just a chocolate sauce but a complex synchronization of seeds, plantains, chiles, tortillas, spices, and more. It is important to note that not all moles are equal; they come in assorted colors and textures and vary from state to state. Guest Chef, Jonathan Perez, of Macheen and El Distrito and Birote Deli.
ABOUT THE CHEF
Jonathan Perez started his own taqueria called Macheen in 2016, but he hadn’t always planned to be a chef. When Perez injured his back in the accident, he decided to pursue cooking and went to culinary school. He started Macheen as a pop up, and now has a permanent residence at Milpa Grille Restaurant in Los Angeles’ Boyle Heights neighborhood.

*This parking lot is closest to Buffalo Wild Wings on Spring St. and Cesar Chavez Ave. If needed, this is ADA friendly and has ramps and elevator access to the underground lot.
Cost: $3.50 every 15 min, $18 max
Option 2: LA Plaza Parking Lot

Cost: $20 Flat Fee (Mon–Fri); $15 Flat Fee (Weekends). Fees might change during holidays or special occasions.
Arrival
Please allow time to arrive early to find parking. Classes have a 5-10 minute late window but will start promptly after that time.
Dress Code
We highly encourage that attendees wear closed-toe shoes when attending an active cooking class.
